Low-fat Pumpkin Muffins

  • 1 box white cake mix
  • 1 fifteen ounce can pumpkin
  • 2 egg whites
  • 1/4 cup water
  • 1 tsp. vanilla
  • 1 tsp cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 cup white raisins
  • 1/2 cup chopped walnuts

Mix all ingredients just until combined. Divide evenly into 24 muffins.
Bake at 350 degrees F. for 15 minutes, or until top springs back when lightly touched.

Hi Su - You're right - knowing what's in your cake mix is important! I should have mentioned that I use an organic cake mix made by Arrowhead Mills. You can read more about this brand here:

and I use organic canned pumpkin, when I can find it.
